Course Description |
Laboratory experiments for proximate analysis of foods (moisture, ash, fat, protein, sugar, starch), analysis of food additives
(colorants, nitrite, etc.) and quality tests (peroxide, acidity, etc.), application of chemical, physical, instrumental,
chromatographic and enzymatic methods used in food quality control. Course is supported with projects. |
